A 9-5 with the factory hitch can tow something in the neighborhood of 3,200 lbs. I don't recall the exact number.
The 5x10 would be fine, loaded up, but you could not max out the weight on the 6x12. Are these enclosed or flat?
Be sure you have the right size hitch ball on the draw bar.
Highway speeds should be achievable without much fuss, but keep it legal for safety sake.
As for fuel economy, expect it to drop considerably, though that will depend a lot on the weight and volume of the load. If the load is below the roof line of the car, you'll have less of a drop than if it's higher, or if the load presents a flat surface to the oncoming wind.
Your other issue will simply be getting U-Haul to rent you a trailer with your 9-5. Regardless of what it can tow, they have their "book", and you'll be hard pressed to get out of there with anything but a lightweight flat trailer.
You could also check your local home center. They usually sell trailers, and they're pretty cheap, and they don't ask questions about what you're planning to tow with!
