Like B Millar said, it's 99.9% certain to be the oil cooler.
You need to find someone familiar with this motor in a Saab to do the repair right. If you work on your cars, you might be able to do it yourself, though it is a long process, involving removing layers of manifolds. Not hard, just long.
This is also a time to do the thermostat.
Lastly, do you know when the timing belt was changed last? These MUST be replaced on a 60,000 mile interval, along with the associated tensioner and pulleys (water pump, too...). Failure to do so will eventually (could be 5,000 miles, could be 50,000...) result in the belt failing, and all sorts of very expensive things happening to your motor. Do a search here for "timing belt".
The 9-5s V6 is a wonderful engine in a great car. I had one for about 15 months, and loved every minute of driving it. But it doesn't suffer maintenance neglect lightly. Fail to keep after it, and things will start to break, and they can be very expensive.
