Obviously your mechanic has never dealt with this engine before. It's time for a Saab specialist. There are tons of good independent Saab specialists out there. They're hourly rates are higher but rather than replacing your turbo, and then your head gaskets for around $3000, they'd know right off the bat it's your OIL COOLER. I have never heard of a 3.0t V6 needing head gaskets. Even my indy said it never happens. If you let it overheat enough eventually the heads will warp but you get the picture... I have also never heard of a turbocharger putting oil in the coolant. It's very common for the oil cooler to leak oil into the coolant on the V6 engine, and I would not have a problem betting a lot of money that's your problem. Try the search function for "oil cooler" and see what you get. It's probably about a $500 repair if you have someone doing it who knows their stuff. While you're in there have the thermostat replaced. It's right next to the oil cooler.
