All the VIN can tell you is basic things about the car. In some cases, that can infer some options beyond what's directly in the VIN, but even those are market-specific.
YS3 - Car built in Scandinavia, code for Saab Automobile, AB (YV1 would be Volvo...)
E - 9-5 chassis (A=C900, B=99/90, C=9000, D=NG900/OG9-3, F=9-3SS, G=NG9-5)
D - Saab internal code. Usually safety system (airbag, etc.)
5 - # of doors. 5 = wagon.
9 - Transmission. In this case 5-speed automatic
A - Motor variant. In this case, the 230 HP ARC motor (2.3T as opposed to 2.3t)
4 - Check digit. Mathematically generated # based on the other 16 digits
4 - Model Year 4 = 2004, 5 = 2005... 9 = 2009, A = 2010, B = 2011...
3 - Assembly line. 3 = Trollhattän, Sweden (which was the only place 9-5s were ever built)
000972 - Serial # for that LINE, that MODEL YEAR and that MODEL. This was the 972nd 9-5 built on line 3 for MY 2004.
If you want to know about the few options that were available to order (that were not dealer-installed accessories), see below:
Xenons - see the attached graphic
Park assist - look for four circles in the rear bumper trim. Smooth trim - no park assist. 4 circles - park assist
Rain sensing wipers - look for a black box on the windshield, behind, but below the rear view mirror.
Wheels: Linears came with 16" 10 (IIRC) flat spoke wheels; Arcs with 16" 5 spoke wheels, Aeros with some variant of 17" wheel (that changed a lot more oft than the others. But remember, wheels are a popular item for owners to change, so you may not get the original wheels.
Spoilers, etc. were all optional, never factory equipment, with the exception of the Aero's front lip spoiler and painted rocker panels (other models had them in black plastic)
On the inside, the only option really was whether you got an auto dimming mirror or not. But again, that would come with the "visibility" or "touring" packages, which usually included Xenons, park assist, and rain sensing wipers.
Saab never had an exhaustive laundry list of options on cars for sale through US dealers. You bought the model (9-3/9-5), picked the trim (Linear/Arc/Aero), and maybe a package. THat was it. Anything else - trailer hitches, sliding load floor, cargo mats, dog guards, spoilers, etc. were dealer- installed accessories.
