The thermostat sticking closed would cause the engine to overheat.
The thermostat sticking open would cause no heat in the car on cold days.
The water pump impellar not spinning would cause it to overheat.
The fans not coming on on low would cause high temps until they came on high.
The fans not coming on at all would cause it to overheat.
We are not talking about a coolant leak as the core problem or there would be a place for the high pressure to go.
A blockage in the cooling system can cause a section of the engine to overheat even though the coolant at the sensor is at normal temperature. The question then is what might cause a blockage? Stopleak products? Engine oil? Silica buildup? A collapsed hose? An infrared thermometer can be used to pinpoint hotspots and go from there.
If I think of anything else that has not already been mentioned I'll post it.
