Bypassin' the Bypass Valve - Any actual difference?

So its getting hot here in Texas, and my coolant Bypass Valve seems to be leaking pretty badly. I've gone through a full coolant reservoir in only a few days.
I called around to have it replaced - one company quoted $850?!?!?!
and insisted I change the entire assembly. No thanks.
Another, more knowledgeable company mentioned I could replace it or bypass it, and that it would only be an hour or two of labor. I've seen the procedure online and it doesn't look too hard, but I probably won't do this myself due to time and humongous, ape-like hands.
I'm wondering if bypassing the valve actually changes anything - I've read that Euro cars don't even have a bypass valve, but I've also read that the AC will not be as cool, which would be a problem here in Texas. Has anyone had such problems after bypassing the valve, or have an opinion on which is better?
How much did you pay to have the valve replaced?
Also if anyone has a mechanic recommendation in Austin, please send it my way.
