Your coolant temp sensor may have failed or become disconnected somehow. It is located near your thermostat housing and is very easy to change even when your engine is full of coolant with very minimal loss. If your temp gauge starts to register as the engine warms, I would think your thermostat is the problem and should be replaced. My understanding is it fails in the open position. Good luck.
