It sounds like the engine is just plain old and tired and the oil might be too thin.
The 99 and 2000 engine seemed to be weaker than 01 and up with more oil leaks and premature wear on timing chain and sloppy oil pump.
With so many miles on it, it might just be a matter of that tolerances on main/rod bearings and balance shaft bearings together with a worn oil pump have reached a point where it just can't keep up the oil pressure with a sizzling hot engine.
It is also very possible that you have more dirt in the oil pan that is partially clogging the pickup screen again.
You would have to hook up a manual oil pressure gauge and see how the pressure fluctuates with cold, warm and very hot engine to get a picture of the health of engine.
I doubt it is one-fix-cure-all problems unless you do a full tear down and rebuild of engine.
I would suggest using a 15W-40 diesel rated oil which is what I use for the old and tired Saab engines here when they have started to consume oil and have marginal oil pressure.
