I've had my 2010 NG 9-5 for almost a year (~6000 mi - I don't drive much), and it has been flawless. However, as others have mentioned, if somebody hits you, it doesn't matter. Personally, if I had to do it over again, I don't think I'd buy this car. At the time, I knew this was a risk, but I liked the car better than any others I looked at, I got a great price (~40K for a Aero with no options), and I wanted to help a struggling dealer and manufacturer. Luckily, I *did* get one free service before the warranties were suspended.
I don't know that I'd spend $1800 on a warranty when there is no guarantee that parts will be available in the future. Internal parts seem to be mostly GM so they may not be a problem, but body panels, head/tail light assemblies, etc. definitely seem like they WILL be a problem - especially with GM's current position that they will not license the 9-5 IP to ANYBODY... so even if somebody makes a go out of the remaining pieces of Saab, right now, the 9-5 will NOT be part of it. And it doesn't seem like enough have been sold to make a business out of selling these parts, but who knows what the future holds... personally, if I was in your shoes, I'd pass until the prices go lower.
