I had a similar problem with my 2000 V6. It showed up during the warranty, but the stealer could never "find" it until the warranty was way past. Each October the warning would show up on the first really cold day. You may have a leak. Mine was in two pipe seals under the intake manifold and it was necessary to remove the intake to get to it - it was not a cheap repair - even at my Indy who is a Saab specialist. The Saab coolant I think is the same as Mercedes and is blue in color. I always add a 50/50 mix to replace losses, but I have none of the MB coolant around, so on a major service, it was all flushed and the leak repaired. The level ought to be just above the coolant tank weld all the time. The low coolant warning is not a 'normal' condition for the car.
If this recurs after refilling to the cold mark (when cold), you need to figure out where it is going. If the car has a coolant bypass valve like the 2000 has, it is a prime candidate. Mine lasted to about 110K, but many have had issues way before that. Coolant losses from a CBV can drip onto the exhaust and be pretty hard to spot. Usually, you have to reach in with your hand when the engine is 'cooler' so you don't get burned. My CBV leaked worse if the AC system was fully off in 'ECON.' The CBV is on the firewall about in the middle of the car under the metal shield.
