Could be a broken vacuum hose or brake booster pipe upsetting the automatic idle compensation that the throttle do.
Or maybe a dirty throttle body not allowing the butterfly to close fast enough.
But the stick shift have a bad delay in letting the throttle down by design so it kind of interferes with if you want to drive sporty and shift fast.
