I would start by only doing what Bruce said: clean the contacts of the plug with contact cleaner and see if the cycle repeats. Mine did what you described once or twice over a year or so, and there was no rush to replace anything, but I would order the parts to have on hand - they are cheap.
Temp sensor will come off with the right deep socket (22mm iirc? and enough internal clearance diameter). What you described sounds more like the sensor. When my tstat failed, the gauge kept dropping to zero or stayed at zero or something. tstat is a wear item though, so if it is old, it should be done anyway. all the work is draining the coolant so do both at once (and a good time to look at any other potential cooling system issues, and refill with new fluid etc)...
