The right approach is spacers. There is no guarantee that new springs won't sag after a bit of use. Some argue that adjusting ride height with spacers is somehow not right, But this is how competion cars are set up. They just live with the fact that spring rates, length and materials are not a constant, so they just adjust the height of the lower perch.
You alignment guy is right. Improper ride height at the rear will increase camber and toe-in. Your car should be 610mm at the rear.
Front ride height is a bit less critical than rear. You could use spacers to adjust he front too, but they are not very available.
There are some good spacers on eBay that some here have used.
This is not a cost item really, but one for more flexibility
