You are indeed fortunate to have found a manula transmission. they are rare and desireable. Install a genuinesaab com shift kit and you will LOVE it.
the seats do fold down like a wagon. There is also a center opening so you can load skis and still seat 2 in the back.
Make sure it is the turbo 4 and not the v6.....no sure if they were still building V6 in 2007....well it is an Aero so it has to be the 4.
This is a great car. only downside for the old 95 enthusiasts is that GM had put a Pontiac radio and heater controls in it by then and messed up the center instrument panel with round chrome trimmed gauges. Also they messed up the front end with those ugly headlights.....but that is all personal taste and does not affect the performance.
Drive it and you will want it. 9000 was great, but 9-5 is and improvement.
