If the fuel pump was actually running at the time the car was turned off, say it was intermittently failing or you were replacing the pump preemptively, then you would want to pull the fuel pump fuse and run the car until it stops. This would depressurize the fuel line so that it doesn't spray out when you pull the feed line off of the pump. As Dragan mentions, they will leak a bit, and it takes a week for the smell to get out of the carpet if you drip any fuel on it.
If the car died when the fuel pump failed, then the line is already depressurized.
When I open up the tank, I like to be outside with all the windows of the car open. It doesn't hurt to disconnect the battery before you open things up to be safe.
