Yes, an open SID will show the engine temperature. So will a Tech 2, and it is even possible that a generic ODB2 reader will show the engine temperature. The dash gauge is programed so that any temperature in the operating range will result in a mid-point reading. I believe the operating range for the dash gauge is programmable, but I've never really looked for it.
However, I can't answer what the operating range is for the engine. The optimum temperature must be around the 198 degrees F (92C), since that is the thermostat temperature is.
