What we don't know is when you say the coolant tank is full, how full is that?
I have had customers come in with the light on saying the tank is full when it is in fact just a little on the bottom and topping off the fluid turns off the message.
You say you could poke on the float level but did you actually see it float up on top of the fluid and get pushed down again with your action or is that float exposed? Usually, it is difficult to spot the float when tank is full.
If the tank is only below half full and if all cooling hoses are old and soft, it is possible that the residual heat and higher pressure pushes the fluid level down to the point of turning on the message after sitting a few minutes.
But opening the cap should allow the fluid to rise again and turn off the message at next start.
On the NG900/9-3 model it was quite common for the level sensor to go bad turning on the message randomly but I have not really seen it on the 9-5. A stuck float level though is much more common on the 9-5.
The other problem is most likely the thermostat opening too early. Maybe you got a bad one when you replaced it.
