You do not have to drain the coolant to change the thermostat. Place a towel or a rag underneath the thermostat housing. When you remove the bolts fastening the housing you will get just a little coolant seeping out of the thermostat, but not all that much. Since the temp sensor is in the same area, and relatively inexpensive, I would also change that item, since these things go bad periodically.
