If you let it sit over night you are fine. It cures very quickly but if you are in no hurry, you could leave it until next day.
You should try the hardest to be careful and extract the long studs in head without breaking them. Some will probably break and some might already be broken but the more of them you get out alive, the less work you have drilling out the others.
Getting a broken stud out is a delicate procedure that can go very wrong quickly all depending on how good you are with an angle drill and centering the drill bit into the stud. You should also use a bigger drill to remove the first threads in cylinder head before trying to extract the broken stud. This is because the shoulder of the stud have damaged those threads so if you try to back the stud out, it will seize on the way out and be stuck even harder and you risk breaking the extractor tool and then you are in even deeper dodo.
Under no circumstances should you rely on the old studs because they will break when you torque down the manifold or shortly after.
