Seems like you got the info you need. Do both the thermostat and the temp-sensor.
I have needed to do this to my (new to me) '03 Aero for a few weeks now. A cool-running engine will get a bit lower gas mileage and be much slower to warm up the heater if the t-stat is stuck all-the-way open.
