Is this air in coolant system? a bad thermostat?

I am working on a 2004 9-5 with automatic transmission. I have just replaced the radiator a week ago. Now, the car warms up, then the needle on the dash starts to drop, then it stops working. The first time I checked the coolant, the reservoir was not hot and the sytem not pressurized, so I assumed the system had air in it, removed the cap and let the car warm up at 2500 rpms, then tightened the cap when coolant came out.

The sensor and the thermostat are reported to be less than 1 years old, so I did not change them with the reservoir. And because this problem didn't start until after the new radiator, I am thinking maybe there is still air in the system, but do these symptoms point more to a bad thermostat, and it just happens to coincide with the new radiator.

If it matters, the coolant temperature is dropping to about 70 deg C, then the needle soon after stops working and drops all the way down and the sensor reads 106 deg C, without changing. If I stop the car, then restart it and let it idle, the needle soon returns to normal (horizontal), temps in the low 80s C
