I assume you are referring to the coolant temp gauge (versus ambient temp reading from the SID).

If you have a code, please post it - low temp and a code can mean the thermostat has failed open or or can mean an issue with the temp sensor or connector.

The temp sensor on the V6 is located on the top side of the engine, kinda behind the TB (see WIS link below). It would have been virtually impossible to disturb something while filling the oil, however, maybe the connector was disturbed when you had the manifold off to play with the valve cover gaskets. You may be able to manipulate the connector without removing parts, although my Indy also has changed my sensor with the TB in place, so good luck.
