Yes, variable displacement compressors definitely make "topping up" more difficult. You can't even go by pressures since the compressor will keep pressures in spec over a range of refrigerant charge levels and you have to get the charge very close for things to work properly.
What you can sometimes get away with if you're certain the refrigerant is a bit low is to add a little at a time, keeping an eye on pressures so you don't go catastrophically over, then let the system settle and check outlet temperature. Repeat until you get acceptable performance.
It is best to avoid "fill to the green" so-called "recharge cans" that just have a low-pressure gauge. Only pure R134a should be used without sealers or other additives (aside possibly for dye), and a full gauge set.
If having the system evacuated it's a good idea to also change the service port schrader valves. Those are common leak points and if original those are 18 years old on a 2008 model.
