Test drive, test drive, test drive. They're all good cars, but the Saab is definitely a sportier ride.
We just traded a 9-5 sedan for a 9-5 wagon, and have rented Volvo S80's when travelling. The Saabs handle better and have significantly more pickup than Volvos. In my opinion, Volvos ride too softly and lack road feel.
Ergonomics is a matter of preference. Most car reviews badmouth Saab ergonomics, but I think that comes from test drivers being set in their ways. Saabs are definitely unique in their cockpits. Unlike other car makers who mimick each other, Saab takes a fresh approach. I've been driving Saabs for ten years, and I find the ergonomics in other cars to be poor when compared to the Saabs that I've owned.
The best way to know if a car is right for you is to test drive it like crazy. Take it on curvy roads, slam on the brakes, floor the accelerator and really find out how you feel about riding in that car. If you really enjoy driving, you'll probably find yourself choosing the Saab.
