Something doesn't make sense....

I just got a call from the SAAB dealer telling me some news about my car. Again, a 2003 9-5 Aero. They're replacing the evaporator for the a/c, obviously was the problem.
As far as my oil consumption goes (almost 3 quarts in 1400 miles), they said they can't tell what's wrong because I topped it off. They did an oil change on it and told me to bring it back in 1000 miles to have tested.
Does this make sense? If it's leaking or burning, shouldn't they be able to tell no matter how much oil is in there as long as there's some?
I didn't want to drive 40+ miles with a car that's valves were ticking so bad it could wake up the dead. I thought it would be best to top it off before going down there. Also, why wouldn't the oil light come on? Or is that just a sensor for the pump?
Any insight to this?
