I don't think i follow you exactly, as coolant would only come out the bleed screw when coolant reaches the top of the system. If you were VERY low on coolant and added some via the expansion tank, then opened the bleed screw with the car off, i wouldn't expect any to come out of the bleed screw. Once the car heats up and the coolant begins to run thru the system and pressurizes, that's when you'd have coolant passing thru the bleed screw area.
Thermostat is usually the first thing to check with overheat problems, as it's cheap and easy to DIY. Something else i would consider is: When the car is idling from cold, when does the fan(s) cycle on (where is the temperature guage)? Thermostat could be to blame, but could also be the fans coming on late (which would be good, as this is another cheap/easy fix)!
Lastly, regarding your coolant leak.... when you've replaced the expansion tanks, did you replace the cap also, or just the tank itself?
