You might have a headgasket leak. I'm not sure if the 8V has the small hose from the radiator to the expansion tank, but if you have one and when you rev the engine, there is a steady stream of "air" bubbles from this hose in the tank, you are probably pumping exhaust into the coolant.
Another thing to check is the spark plugs. If one or two are amazingly clean while the rest are normal, you have a leak. Other tests to run include a pressure test on the cooling system, a compression test on the cylinders and also there are exhaust gas sniffers for the coolant.
You might have cooked your thermostat and if you did not get enough coolant into the system on you initial refill, the coolant level might have been below the fan temp switch so the fans won't come on. Worse case is the overheat warped the head or cracked the block(unlikely), but if the headgasket turns out to be the problem, you can address these issues when you put in the new headgasket.
