My grey 87 SPG has the light tan headliner, too. I am sure it was the original color.
Why tan? because it's cheaper to standardize as many parts as possible.
I'm considering replacing mine, too. I was quoted $325. Not a bad price considering the labor involved (check out the FAQ before making your decision). But high enough I may do it myself.
I'm thinking of a very light grey headliner. The darker the color, the smaller and more claustrophobic the cabin can seem. But a very light grey shouldn't be too bad and I think it would look quite nice with the grey color scheme.
