As you noted, '87 and earlier cars have the handbrake mechanism in the front calipers. The only tricky thing about them is that you have to set (or reset) the handbrake mechanism when you change pads, rotors, etc. If you need to compress the piston (say, to install new pads) you have to 'screw' one of the pistons into the caliper. It's a little hard to explain but once you've seen/done it it all makes sense. There's a special tool for this that engages the holes in the face of the piston. It's easy to make, or you can use right-angle snap ring pliers.
On new calipers you probably won't have to worry about this when installing the new parts, as the mechanism will probably already be 'reset'. I usually screw the piston out to take up most of the clearance in between the new pads and rotor, but I don't think this is strictly necessary. Bentley says to raise the handbrake lever 7 clicks then press the brake pedal several times to set the mechanism. I think that if there's a lot of clearance in the new calipers/pads/rotors, it may take more like 'many' times.
To answer your question, it's not really a difficult job. The front pads themselves are easier to remove/install on the earlier cars, as you don't have to remove the guide pins and the floating caliper like you do on the later cars ('88-on). It's probably about a wash. I put front pads (only) on a friend's '84 900T the other day, and it probably took me 20 minutes all told, from wheels-on-ground to wheels-on-ground.
