turning the A/C on will make the engine run hotter, not colder. And furthermore you shouldn't need the cabin heat to keep the engine cool. If so you've got some cooling system problem.
I used scantech valves both times (the first time because I didn't know better, which lead to doing it again a year later, and I used the cheep one again because I had it) The scantech valves are poor quality. I would suggest the saab OEM unless you think this is something you want to do again.
The last time, I did it without removal of anything else. It's not that bad, but you have to be comfortable with doing it by touch (blind).
The seal between the valve body and the heater core is a pair of o-rings. Being that the valve is above the core, it's not easy to keep them in place during assembly. I used Wurth DP-300 gasket sealant (non hardening type goo) to keep them in place while I put it together.
Like you said, a ball hex key is needed for the screws. Because seals are o-rings they don't need to be that tight. Maybe some goo or threadlocker on the screws is a good idea so you dont get them backing off and leaking later (ask me how i know).
