What a nice car you have!!!...I have an 85 900T...in Slate Blue Metallic which is the color they came up with before Edwardian Grey I think...looks very similar. I had my car repainted 4 years ago and it still looks like new.
My 02c would be to keep your car as original as poss...so don't paint anything plastic...that stuff often peels anyway unless done really well...which is expensive. I would also take off everything possible especially all the wheel arch trims and make sure repairs in this area if needed are really well attended to.
