This is a new one, never heard of anything like this; however here's how I'd attack to narrow it down:
1) Remove drivers speaker grille, reach in carefully and disconnect the speedometer cable. On your 91 it should be the rather thick wire going straight into the middle back of the speedometer, with a white clip you squeeze to remove. Careful, the white clip can break easily. Still have the noise (Note: I have no idea how a speedo could make this noise but since its speed dependent that's why I suggest doing this 1st)
2) Since you've got a convert, perhaps its a very odd frame or structural issue, ie loose bolt or cracked weld somewheres.... Does this happen with top up OR down? If you put your hand on the windshield, A pillar, top of windshield molding, can you feel the "pop" noise through any of the car? This might point to some weird frame issue.
3) Does it matter which gear you're in? Ie if you have a manual trans, does it do this if you hit 30 in 2nd gear, or hit 30 in 3rd gear, or hit 30 in 4th gear? I'm trying to see if its maybe engine mount related.
Try this .. keep us posted, this is a good one. Can you describe more about what the sound "sounds" like?
