As the others have noted, the engine was designed to run at a specific temperature, and the thermostat helps maintain that. Cooler isn't better for a device that runs on a thermal heat cycle.
It's not like it will keep the car from overheating. Overheating occurs when something goes wrong, and all a lower thermostat setting will do is delay that overheat by a few seconds. And if the failure is the thermostat sticking closed, its intended setting doesn't help much.
The cooler fan switch is a good idea. The best 'protection' the engine can have is a nice reserve of cool coolant in the radiator, so the thermostat can do its job. Once things are so warm the thermostat is always open, its setting is meaningless. So having the radiator a bit cooler helps, as does having a radiator with good flow and fresh coolant.
