When "lean burn" engine designs came in, they increased the temperature of the thermostat to keep the engine in the heat range at which lean burn operates most efficiently. You can run a colder thermostat in an older car during the summer, but modern engines are designed to run hot and you should always run the temperature thremostat recommended for your engine.
I agree with Larry about running a lower cooling fan thermostat. I've got a 165 thermostat (a VW part) in my '78 99.
