It's not as complicated as it appears... By far the worst is getting the spacer inserted sufficiently and removing the whole works from the car. Everything else is fairly simple.

1: Just pull it out. You may need to use a big screwdriver to pry it out. Definitely replace the pressure plate. You will need to compress the new one a fair amount to insert the spacer - if you don't have access to a press, you can jack up the car, set a big socket/whatever in the center of the pressure plate and find a chunk of wood/whatever to set on top of that, then use the jack to slowly lower the car and use the weight of the car to compress the pressure plate fingers. Then, (watch your fingers!) insert the tool into the new pressure plate.

2: Just pull it out/use a screwdriver to remove it. If you use the hydraulics, it might be possible to extend the new slave too far and pop the cylinder out of the bore, making a big mess and creating a PITA.

3: Yes. A big screwdriver. Pry it out. They can be incredibly tenacious, however, and I would be tempted to leave it alone if it is not leaking.

4: Get one somewhere, I would definitely replace it. To remove the pilot bearing, remove the flywheel from the car (I usually mark which hole has the locater pin in it so as to put the flywheel back on in the same place), set it on some blocks of wood, find a socket that will just fit into the hole in the flywheel and press on the outside race of the bearing, get a big hammer, and whack it out. It is not in there very tightly. Insert the new one with a block of wood and hammer, just make sure it goes in straight.

5: Sachs is fine / may even be the same.

Put some grease on the splines of the clutch shaft where the clutch disc rides when you reassemble.
