Like I said I think that your idle is set too low and that accounts for the pressure light coming on momentarily. If the engine was bogged down by AC, headlights (alternator load), etc. and the AIC wasn't doing it's job that could also explain the low idle speed. As you know, the lower the engine RPM the lower the oil pressure. The tapping may be a sticky lifter and the solution to that is free it up or replace it. Changing to 15-50 oil is unlikely to affect it and it will break down faster than 10-30.
If this engine was once run low on oil (you said that's why you replaced the head) it's possible that other damage was done in which case the thing to do is get the idle up and see how long it will run for you. The tri-metal bearings that SAAB used are very sturdy so they may be just fine in spite of that incident. If damaged bearings are dropping the oil pressure a used replacement engine is the most cost effective solution. You could pull the pump and inspect it but I'd start with correcting the low idle and see how things go.
