I would probably skip the valve guide seals. I never see them being needed. I would however put rod bearings in it. They don't cost much, and at 188k, you'll have some wear. As the other poster said, you can most likely just put in standard size, and skip any machine work. I don't think I'd get into rings either unless you have some reason too. I suspect that if you take off the head, you'll find the original cross hatch pattern still clearly visible on the cylinder walls.
You DO however want to replace the oil pump pickup o-ring. You should also take a good look at your right side engine mount and upper control arm bushings. Both are simple to do with the engine out and very hard to do with it in. Might also pay to look at the alternator's brushes. They are a lot easier with the engine out too.
the problem with the timing chain stuff is that the guides are hard to find, and the aftermarket ones are garbage. I'm not sure if the SAAB guides are NLA, but they used to be expensive.
