I have not changed ALL of the fluid, but I have totally drained the reservoir, the clutch master, the line to, and from the clutch master, and the slave. The entire "clutch" half of the brake fluid system is new. What is kicking around in all of the brake lines is old.

That is an interesting notion on the worn disc, and the air pressure in the system giving the impression of resistance. The only thing that doesn't make much sense with that, is that when I have "air" in the system (call the added pressure from the bleeding, "air"), the clutch engages and disengages near the top of the range of motion, where as when it has no "air" in it, the clutch basically engages as soon as I start to release it from the floor, so somehow, I am getting more range of motion on the slave, and more depression on the pressure plate fingers, when the system is pressurized.

For such a simple system, its really starting to boggle my mind.
