Though Hall sensor output is really low-current one, but it has enough voltage (5V or 12V for different sensor types) to withstand all those EMI's under the hood from spark plugs, alternator and so on nor it produces any significant EMI by itself. And you can refer to other makes and models (e.g. C900 2.1L, 9K DI/APC) that run HES's and see that only quite of them use any shielding for this circuit. It's indeed a real overkill here.
You can go with any red-green-black 3-wire cable you like.

If you do want to go the saab way - take red+green+black wires, get them plaited like that girly hair to make a twisted cable and finally wrap some foil-based adhesive tape over the cable to make a shield. Moreover, you can make it even better then the stock one: put the final product into some silicone tube to protect it from high temperature emission from the engine and the rad. You have my word: such cable will last forever.
