To get them out you just need to put a long screwdriver blade on one wing and tap with a hammer, then put the blade down in between two wings and spin it out.
But they absolutely MUST be tightened tight, to hold the shift housing against sliding. So you either need to make your own special socket, or take the easy way out:
These are actually SAE 1/4"-20 threaded carriage bolts, the standard US thread type, found in all hardware stores and in most odd bolt cans in garages and basements everywhere.
You can replace all the 3-wing nuts with standard 1/4-20 hex nuts, and use a 1/4" drive socket, either 11 mm or 7/16", which should fit down into the well and work perfectly.
They were originally the 3-wing pattern I guess as an anti-theft precaution. But how likely is ANYONE other than yourself to want to take these apart, on cars the age of ours?
