All you need is a good working thermo-switch with threshold at around 90C, period. But there's nothing wrong if you go with winter and summer switches and thus you get some margin of safety - I even know some folks who go with winter/summer thermostats (but they're hard-core jeepers).
But even though it comes that easy, one must remember that it isn't that hard to boil up a car in winter: just hit a snow bank heavy enough to clog the radiator with snow and then spend the next fifteen minutes in skidding back and forth trying to get back to the road.
This all leads to a relatively simple, but quite necessary piece of maintenance: clean your cooling system both inside and outside every 60Kkm or two years whichever comes first. Or even every year if you feel some obsession to die Ordnung (which is a great thing itself, but lets leave it for General BB).
As for the thermostat - you'd better go with the original one. Because Saab designed the cooling system that way which heavily relies on thermostat ability... Better refer to Townsend FAQ at the link below (scroll down to the thermostat drawing and read from there), he's got much better English than mine.
