Convertible top replacement options

Hey guys, it's finally time to tackle the top on the '91 SE. The existing one is literally ripped to shreds and has been that way since long before I bought it.
Question for those with experience: What are my options for cloth? I have about $500 or so and am willing to install it myself. I hear that German Sonnenland canvas is the best and Stayfast is the next down before Twillfast and then sailcloth. I've found a couple of places online that sell the German canvas for a good price. I have also found a couple of fine print items - i.e. "The installers will have to measure and cut out the rear window hole." As far as the rear window itself, I already have an OEM replacement that will go in.
Any advice? Any good, cheap places to purchase the cloth? Any extra stuff that I should buy for installation while I'm at it? Headliner is excellent, have a new OEM rear window section waiting. Tack strip?
Thanks!
