I agree, they're a PITA.
I usually push the passenger side carriage bolt in first and hold it with a finger or two of the right hand as I lower the gear lever housing onto it with the left. Then, still holding it up with the right hand, thread the nut onto it. After that, it's easier to push the other carriage bolts up and thread the nuts onto them. It's easier with both seats out.
FWIW, I usually go to Home Despot to get some nuts to replace the three-corner nuts. They're SAE threading, but I forget exactly what size.
