It won't hurt it per se, but a sticky throttle isn't a great aid to driving the car. You could push on the pedal, nothing happens, then it opens quickly and you know the rest of the story. So, I would be very careful, and repair the stop screw as soon as you are able. The material is soft, and you could drill it out, refresh the threads with the correct tap. But, you knew all that. Glad that this is starting to resolve itself.
The dashpot is there to keep the throttle from slamming shut and the engine dying. At least I think that is what was in the minds of the Bosch guys head.....sometimes, I wonder...
