I *think* this is relatively easy. The real experts on here will know for sure.

Remove the knee bolster. Removing the drivers seat makes it easier too.
Slide the rubber boot back and remove the bolt that clamps the UJ to the rack.

Remove the bolt on the upper UJ.

Slide the UJ shaft up the steering shaft far enough to get the UJ off the rack and it should come right out.

I do not think you will be able to source new shafts. I am guessing there may be specialist rebuilders though.
