Air released by the bypass valve into the atmosphere would be air that the air mass meter measured and accounted for with extra fuel. Normally the vented air enters just before the turbo inlet, increasing the pressure there and slowing airflow through the air mass meter. Since it does not, you will likely run rich whenever the bypass valve opens. No first-hand experience, but I'd be willing to bet it could stall the engine without much trouble. Also, the bypass valve will remain slightly open at idle (blow-offs don't do this), so you would be running rich at idle as well.
I also think it may be worth noting that when I installed a K&N filter (a cannon type, not the one that goes in the stock airbox) on mine, I was then able to hear both the turbo compressor and bypass valve without retrofitting a blow-off. I've heard that for some reason this is not always the case though. For reference, it's a '92 9000T.
