As long as you have good tires, I believe that you will find your front end grip will actually improve with poly bushings. At least this has been my experience recently (read my post below).
Even on rough or bumpy turns, where understeer is more of a problem, I have found that the grip seems to be improved. For lack of a better descripton, the stock suspension seemed to "bobble around" a lot more while turning on rough pavement, so the front end would readily start to slide. This was especially disoncerting if a sharp turn started smooth, then suddenly transitioned to rough pavement.
Either way, understeer is generally considered a much safer condition than oversteer, because it is easier to correct for. By lifting the throttle or even braking, you transfer the weight back to the front, and your traction is magically restored.
I have no experience with poly bushings in the snow. Although I have found that the improvenets seem to carry over to wet pavement, I haven't tried to push the car to its limits in the wet... I mean, whats the point?
The grip is more than suffucient for sane, careful driving, which is the ONLY approproate thing in slppery conditions anyway.
Why not try them and see for yourself? It's pretty easy to switch back to rubber if you're not satisfied. Remember also that different combinations of rubber and polyurethane can help you "tune" the suspension suit your needs. I have found that a poly bushing above, and a rubber bushing below the control arm is the best arrangement for my car.
The nice thing is that you can tighten or loosen the end-link bushings without even jacking up the car!
