I had somewhat similar problems with my late, and unlamented Renault 25. The H/G HAD gone, but in a limited sort of fashion. It allowed the passage of gas into the water-gallery of the head/block only on the expansion stroke of the 4-stroke cycle. There was nothing in the oil, the coolant had erratic temperatures even shortly after start (at a low ambient temp. the problem didn't show for 6-10 miles) because of hot gas/coolant passing the temp. sensor. It took a pressure-test of each and every cylinder to show that number 3 was leaking when hot. I took off the head and the gasket HAD failed, but in a tiny section. It would, of course, have become catastrophic if left long enough.
My advice is to lift the head and replace that gasket BEFORE it becomes catastrophic as it sounds like you have just a tiny leak, same as my Renault had. There's a lot more maintenance that you can do at the same time, so schedule a decent break in which to do it all.
