2 pounds should be pretty much a correct total charge. At 4.2 pounds, I would expect the pressure to be so high that the relief valve on the back of the compressor is blowing out the excess.
I suppose there could be an obstruction in the drier or expansion valve, but I would think that the high side would go through the roof as the compressor keeps pushing against the blockage.
My two thoughts are that there is something wrong with the compressor and it just won't build enough pressure (but then why would the low side get down to 5?), or maybe there is something going on with the machine you are using in terms of the charge weight scale or the gauge set.
I am assuming you have a Sanden 508 compressor. My guess is that it is self destructing internally. Try the experts at http://www.aircondition.com
