Radiator Fans

I've been chasing an intermittent A/C problem. The AC quits when the underhood temperature is high. I have another observation and a couple of questions;
The radiator fan used to run for 20-30 seconds after the car is turned off on a hot day, but it doesn't do this anymore.
The low and high speeds on the fan work, if I remove the relays and jumper the appropriate pins. Which relay runs the fan when the car is off?
Also, it occurs to me that this could be a bad temp sensor. I don't see a thermal switch in the radiator, so the radiator fan must be controlled by one of the two engine temp sensors, through the engine computer.
One temp sensor is on the end of the block near the thermostat. The other temp sensor is near the intake manifold, between cylinders 2 & 3. I'm guessing that one runs the temp gauge and one goes to the engine computer. Which of the temp sensors is used to control the radiator fan?
